  • Temperature Measuring Devices (repeated violation)
    Observation: There was no temperature measuring device located in the Drink display cooler, walk-in refrigerator and walk-in freezer.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. Made PIC aware of thermometers.
  • Non-Food Contact Surfaces
    Observation: EHS observed the nonfood contact surface of the ceiling vent has dust and debris build up.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the walk-in refrigerator and walk-in freezer. EHS measured light intensity in walk-in refrigerator and freezer and it was reading less than 3 foot candles on the meter.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. Educated PIC about needing 10 foot candles in walk-ins.

    Observation: Banana peppers, steak, creamer cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Temperature Measuring Devices
    Observation: The temperature measuring device located in the reach in unit under the oven is apparently out of calibration. Temperature reading 40, but all items 46-47.
    Correction: Replace thermometer to ensure accurate temperature in unit.

Updated and verified food card list.
Dumpster area clean and well kept.
Reminded handsinks to be used for handwashing only, not rag storage.
Manager informed me that there is a back order of handwash signage (see previous inspection) order has been placed. there are handwash signs at both restroom sinks and handwash sink in back however, just waiting on new sign for handsink behind cash register.
No violation noted during this evaluation.		10/06/2014Routine
Reheating of meatballs reviewed with PIC. Good process in place. Reheating occurs only once then product is either used or discarded.
