Discussed cleaning and sanitizing. Concentration, temperature, contact time, and frequency.
Good understanding the importance of food allergies.
Good handwashing and prevention of barehand contact observed.

  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Meatballs hot holding at improper temperatures. The steam unit had dried out.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. Always assure there is water in the hot holding unit to produce steam.

Observed very good hand washing and proper glove use. Good sanitizer concentrations and personal hygiene. Still need to remove the unused equipment. I understand a remodel is scheduled for some time around may. Have ALL unused equipment removed at that time, meanwhile clean all unused equipment, as unclean unused equipment can lead to pest harborage conditions.
  • Food Storage - Clean and Dry Location (corrected on site)
    Observation: Food stored on the floor or food stored less than 6" above the floor. Lettuce stored on floor of walk-in refr.;Elevate food storage onto approved shelving with minimum 6" legs or casters. Lettuce moved to rack.
  • Premises - Maintaining Premises - Unnecessary Items and Litter (repeated violation)
    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment. Old counter refr. still present unused as well as old open cold holding display unit.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.

    Observation: Food in the under counter refrigerator up front and the glass door refrigerator holding at improper tempertures.
    Correction: Manager decided to discard potentially hazardous food placed in these unit yesterday or before.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The under counter refrigerator and glass door refrigerator are not holding food at or below 41°F.
    Correction: Repair or replace these units to assure food is being stored at 41°F or lower.
