Make sure the temperature of the meatballs are checked to ensure they are reaching 165 F in two hours or less. They had already been on the steam table for 3 hours and so the inspector could not clearly confirm whether the two hour parameter was met or not. Adequate thermometer, quaternary ammonia sanitizer, 3-vat setup, and test kit. Reviewed employee health. Suggest lowering the thermostat in the right low cooler to provide better cold holding temperatures during warm weather months. Make sure not to overstock items in the serving line wells. Cold cut combo was the only item overstocked and it comes packaged with deli tissue paper between portions. The paper acts as an insulator, further affecting the cold holding of this product.
