Notes:
1. No longer keeping TCS half+half out for use. Now using shelf stable product.
2. Suggest keeping the whipped butter packets and cream cheese pouches nested in a bowl of ice. Make sure the bowl is large enough to keep ice/water under and over the butter and cream cheese packets. Temperature must be maintained at 41 F or less. Product is only kept out til 11 am per owner.
3. Facility has concentrated bleach on-site. Make sure staff understand that stronger bleach means they need to use less when mixing sanitizer. It literally took 3 drops to mix the sanitizer spray bottle to 100 ppm chlorine while the inspector was present.

    Observation: Sanitizer spray bottle tested at 0 ppm. No detectable chlorine.
    Correction: Sanitizer spray bottles must be mixed to 50-100 ppm at all times. Use the the chlorine test kit to ensure the proper concentration of sanitizer.

Adequate thermometer and chlorine test kit. Employee health policy is in place. Bleach water tested at 10 ppm in a spray bottle. Staff states it's mixed every other day. Make sure to mix to 100 ppm if that is to be the standard practice. The sanitizer will lose strength over time.
Stirrers are to be rinsed and stored on a clean, dry surface between uses. Replace with clean untensils at least every 4 hours.

    Observation: Wiping cloths improperly stored between use. Spray sanitizer tested at 0-10 ppm.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

Per staff, the BA clear cooler was open for heavy stocking earlier this morning. Air temperature of the unit had recovered, but some product temperatures were noted as being higher than usual.

Adequate thermometer, bleach sanitizer spray (getting weak), and test kit. Reviewed employee health.
Thermostats on the coolers listed above need to be lowered to provide safer cold holding temperatures. Under the best conditions, product temperature in a refrigeration unit will run 2-3 degrees higher than the ambient air temperature of the unit. Units that are subject to heavy in/out traffic must be cold enough to handle the temperature fluctuations, maintaining all product under 41 F.
Contact the inspector once the refrigeration units have been serviced and temperatures lowered.

  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Foods in the BA cooler and milk in the small GE cooler cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The BA cooler and small GE cooler are not maintaining product temperatures of 41 F or less.
    Correction: Repair the coolers to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the coolers, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
