The door to the 1-door BA cooler has been repaired. The thermostat was lowered from 5 to 7 while the inspector was present to try and drop the air temperature of the unit. Staff said they have been extremely busy today.
Please looking into getting at least one employee ServSafe certified before the start of 2016.

The door to the one door low BA RIC must be repaired immediately. Improper closing of the door has caused a critical violation for the improper cold holding of dairy items. A follow-up inspection will be done on 10/1615.
Please provide the certificate information of at least one employee who is certified in food safety. Having certified staff will become a requirement in the coming months as we adopt a newer version of the VA Food Code.

    Observation: Half+half and heavy whipping cream is cold holding at improper temperatures in the one door BA low RIC.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door to the one door low BA RIC is in poor repair. The door hanger is damaged and does not allow the door to close/seal tightly along the top. As a result product temperatures are not cold enough.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
