| Quizzed manager on employee health. All staff have signed FDA form 1-B and are aware of illness reporting requirements. 3-vat sink set up correctly. Discussed overstocking of deli meats in the top wells of the MUT coolers. Deli tissue paper acts as an insulator and will cause meats to hold at a higher temperature. Based on current stocking of the meats, even turkey, which was stocked 3/4 full, was still somewhat elevated at the upper portions (measured 43 F). It is essential that the pans NOT be overfilled for proper temperature control. Overstocked meats were moved to the bottom of the MUT cooler for safer cold holding/cooling.
