Routine
Establishment with an adequate metal food stem thermometer & quaternary test kit. The sanitizer/wiping cloth set up was adequate. The three vat sink set-up was adequate. Adequate employee health policy in place. Health permit posted & visible. No violation noted during this evaluation.

The facility is approved for food service operation pending approval and/or issuance of a Certificate of Occupancy by Chesterfield Building Department. The proposed opening date of the facility is scheduled for 1/22/15.
Temperature - Food Temperature Measuring Devices - Provided (repeated violation) Observation: The person in charge could not provide a food temperature measuring device.The operator is awaiting receipt of the smallwares.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Toilet Room Receptacle Covered (repeated violation) Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
Correction: Install a covered refuse container for the disposal of feminine napkins in the ladies room stall.

Follow-up
The following observations were noted: Veggie Wash 100 to be utilized by the facility, an Employee Health policy (FDA Form 1B) was discussed and issued at this time, addl CFM Dwight Tausz cert# 7351222 exp. 9/18/15
Food Display Observation: The food on display is not protected from contamination ( a sneezeguard was not provided at the front food processing area, by the Randell cold table).
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.

Handwashing Lavatory, Water Temperature, and Flow Observation: Water from the handwashing sink at male and female restooms were measured at a temperature less than 100°F ( restrooms measured 68 and 67 degrees F).
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

Physical Facilities in Good Repair Observation: Spacing was observed around the floor drain before the 4 compartment sink, in the warewashing area.
