  • Critical: Hands and Arms Cleaning Procedure*
    Observation: Improper handwashing procedures observed. The female dishwasher was observed rinsing her hands after handling soiled dishware before storing recently cleaned food trays.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Food - Potentially Hazardous Food - Slacking (corrected on site)
    Observation: Frozen food slacked at improper temperatures ( corn dog nuggets in the cookline side rolling rack measured 51 degrees F- TCS product held less than 4 hours). The operator cooked the food item..
    Correction: Slack frozen potentially hazardous food to moderate the temperature at 41°F (45°F) or less or at any temperature if the food remains frozen.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Wrapped cheeseburgers on the serving line measured 108-123 degrees F, the TCS food product was held < 4 hours. The hot holding box ambient air thermometer reading was183 F and a service call was made for the hot holding units.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.

If unable to repair the Cook-line RIC, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
