    If using produce wash obtain test strips to test for appropriate level of solution.

    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read <, 184ºF>.but the temperature sensitive strip did not change color.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Observation: The handwashing facility located at the front 2 sinks in the kitchen are blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the @EQUIPMENT@ preventing its use.

    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

Cans of raid were found in the cabinets. Bug spray was discarded during inspection.

Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process

    Observation: Pasta with sauce and vegetables noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. DIscarded during inspection.

    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Discontinue use of #1 cooler for items on speed racks as they do not allow proper air flow to cool potentially hazardous foods.

    Observation: Harborage conditions exist. There are roaches in the kitchens, serving areas and cabinets of dining areas.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Have pest control company treat, repair holes in walls and clean.

Cooler #1 has been out of temperature on all inspections since 7/25/12. This cooler must be replaced in order to keep permit in good standing.

    Observation: FOOD in cooler #1, banquet cooler, cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Discontinue and replace cooler #1 as it has been out of temperature on every inspection since July 2012. The banquet cooler has been out of temperature on previous inspections. If it can not be repaired to maintain food at proper temperatures replace it.

    Observation: Hot holding cabinet was observed in a state of disrepair and damaged.
