    Observation: The food contact surface of the paper cup (used in margarine tub) is not designed or constructed to be smooth and it contains cracks, chips, or pits that can not be easily cleaned.
    Correction: Replace the @EQUIPMENT@ to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris.

Observations discussed with employee. Soup brought in from the outside out of temperature 129, 130 degrees. (discarded) Discussed proper way to transport food. Top of prep table not holding foods at 41 degrees. thermostat turned down and lids placed on table during slower time.

Observations discussed with CFM. Dishmachine will not be used until the temperature gauge reflects a rinse temperature between 180 and 194 degrees Fahrenheit. Observed facility in great sanitary condition!
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was above the maximum allowable level of 194ºF. The thermometer read 230 degrees Fahrenheit. Temperature measuring device appears that it is not operating correctly.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
  • Plumbing System Maintained in Good Repair
    Observation: Spray knozzle at three compartment sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
