No violations observed during today's (10/13) inspection. NOTE: Overall kitchen was neat, well organized, and well lit. Good job with visible thermometers near the door in coolers. Great job labeling spray bottles to easily identify their contents. Good separate storage of chemicals away from/below food, single-use items, and clean dishware. Discussed storing boxes of gloves near the hand sinks to help encourage the habit of ONLY putting on gloves after washing hands. Facility keeps food and equipment temperature logs and prepares food for other LCS.

NOTE: Facility keeps food and equipment temperature logs. Walk-in coolers and freezers were neat and well organized. Good job having a designated area away from food & clean dishware for employees to store their personal items. Good separate storage of chemicals away from and below food and clean dishes. Hood were observed to be very clean. Reminder that all employee beverages in the kitchen must have both a lid and a straw - no twist tops or to-go coffee cups.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: The final rinse cycle at the high temperature dish machine was not in the acceptable working range of 180-194 degrees F. The final rinse was observed to be 199 and 201 degrees F.
    Correction: Until repairman can get dishmachine to proper working order, all dishes must be manually washed, rinsed, sanitized, and air dried at the three-compartment sink in a chemical sanitizer. Once dishmachine is repaired please call the office.

  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: The prepared ready-to-eat Chicken and Pork in the refrigeration unit was not discarded by the ""consume by"" date.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
