  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Food cold holding at 44-45 degrees in the three door unit cold holding. Operator had been having problems with freezing food so the temperature was turned up.
    Correction: Thermostate was adjusted down during the inspection temperature had droped below 41 degrees during the inspection. Asked the operator to monitore equipmet and food temperatures to ensure food is maintained at 41 or below.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) cooked sausage and chicken salad in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Operator dated durng the inspection.

Facility permitted as of today a 30 day inspection will be conducted on or around 5-11-13. Permitted for serving bottled water only. Asking for the time as a control procedures to be emailed. If menu changes verify procedures with the health department. Operator to have the sediment filter replaced and another water sample taken with in 30 days.

Seal back concrete floor and provide coven at the floor wall juncture in this area.
Ensure the wall beside the back handsink is smooth and easily cleanable.
Review employee health policy with all food handlers.
Have air thermometers in all refrigeration and food thermometers onsite.
Review glove use and handwashing practices with all employees.
Operator agreed to call the health department before expanding food handling and preparation processes in the facility other than what was provided..
Detail clean facility prior to opening.
Operator agreed to provide a written plan for the time as a control for the displayed foods.
