Dishwashing facilities were being maintained properly. No food temperature problems were observed.
- Hair Restraints - Effectiveness
Observation: An employee was observed working in the food service area without proper hair restraint.
Correction: All employees working in kitchen areas are required to wear a hair covering such as a hat, an open visor, a scarf, a hair net, or some other type of hair covering that we have approved.
- Utensils - In-Use - Between-Use Storage
Observation: The ice scoop, associated with the big ice machine, was being stored directly on top of the machine, above the entrance door to the ice storage bin.
Correction: The ice scoop may not be stored directly on top of the ice machine. The top of the ice machine is not considered to be an easily cleanable surface because there is a risk of "dripping" when one tries to clean this surface. The ice scoop needs to be stored in a smooth, easily cleanable container, or in a smooth, easily cleanable tray.
- Critical: Backflow Prevention, Air Gap*
Observation: A hose is attached to the external water faucet of the hot water heater (attached near the bottom of the hot water heater). There is no "back-flow prevention device" installed between the faucet and the hose. Also, there was a sprayer attached to the hoe, at the time of the inspection.
Correction: We require that the appropriate "back-flow prevention device" be installed between the faucet and the hose. Since a sprayer is sometimes attached to the hose, this is a "water under pressure" application." For "water under pressure" applications, a "double check valve with an intermediate atmospheric vent" type of back-flow prevention device must be installed between the faucet and the hose. This installation must be completed as soon as possible.
- Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
Observation: There was a hose nozzle, in the basin of the back kitchen handwashing sink. Also, the back kitchen handwashing sink was obstructed by cardboard boxes, so that this handwashing sink was not easily available for handwashing.
Correction: Nothing may be placed in, or stored in, any of the kitchen handwashing sinks. Handwashing sinks my not be used for any purpose other than handwashing. Also, the kitchen handwashing sinks may not be obstructed at any time. Nothing may be placed in front of a kitchen handwashing sink. We need to do everything possible to encourage frequent, and whenever necessary, handwashing. This violation was immediately corrected by the establishment management.
