* Giving owner information for upcoming managers food safety classes in our area. It's highly suggested that the manager and the assistant manager take a food safety course in the near future as Virginia Environmental Health updates to the FDA 2013 Food Code.

Observation: Observed top portions of roast beef, chicken breasts, and sliced teryaki chicken cold holding at improper temperatures of 44F and 45F. Items had been stacked above the container lines during lunch. PIC removed excess product and placed in refrigeration to cool back down to 41F or below.
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Observation: Ice scoop for the ice machine is being improperly stored between uses directly on top of the ice machine.
Correction: Store the ice scoop in one of the following manners: 1) If placed in the ice, the handle of the scoop must be kept above the top of the ice. 2) Or place ice scoop in a clean, protected location such as a clean container placed next to the ice machine.

Observation: The food contact surface of the ice scoop is not safe and is chipped at the edge of the scoop.
Correction: Repair or replace the ice scoop to permit easy cleaning and prevent physical contamination of the ice.
