Notes: * All food items not in their original packaging should be marked with the name of the item and the date the packaging was opened. Discard within 7 days from the date opened. * Included with this inspection is a sample employee health policy. Suggest implementation ASAP. * Pest control operator is Pest Control Company out of Tazewell. Per GM, maintenance is done every 30 days. * Suggest having a set of tongs for the food in the breakfast bar mini fridge. * Make sure that all food contact equipment is being washed, rinsed, and sanitized after each use. * Drainboards on the 2-compartment sink should not be lined with towels. * According to GM, a breakfast area and kitchen remodel is scheduled to be done in the coming weeks. Contact the health department for changes before they are made.
Critical: Demonstration of Knowledge* Observation: The person in charge failed to state the required temperatures and holding times for the following conditions of potentially hazardous food: (1) Refrigerated storage, (2) Hot holding, (3) Cooling, and (4) Reheating.
Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a iodine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
