Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Cooler had not been plugged up at start of morning loading.(Make sure this unit is connected before loading to hold foods at proper temperature) Potentially hazardous foods discarded and replaced with unit working.

Observation: Observed a hose attached to the mop sink faucet fixture. The hose extended below the flood rim level of the sink basin.
Correction: Hose removed during inspection. Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Observation: Condensation Line in the walk in freezer was observed in a state of repair and condition preventing effective maintenance and easy cleaning.
Correction: Discard, replace or repair the equipment to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: top area inside the ice bin.
Correction: Clean and sanitize these surfaces for food contact.

Observation: Floor in the kitchen noted in need of cleaning. Noted soiled from food and grease between units.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: Food storage under lines on which water has condensed. Observed in the walk in freezer.
Correction: Relocate food storage to an approved area or shield the lines to intercept potential drips. Food was removed and discarded by the manager during the inspection that had been exposed. To have the unit repaired or take the action listed above.
- Ventilation Hood System, Drip Prevention
Observation: Grease from the exhaust hood system at the cook line was observed dripping onto food contact surfaces below.
Correction: Alter or replace the hood system to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, single-service, and single-use articles.
- Refuse - Cleaning Receptacles
Observation: Grease container at the Trash Storage area are soiled an have an accumulation of debris. Do not allow the grease to spill on the ground surface.
Correction: Refuse containers are to be cleaned at a frequency that prevents the build up of soil. If the grease spills on the ground surface take correction to immediately clean the spill by an approved method.

Observation: (1) Vent Fan in each Restroom not maintained in good repair.
(2) Commode seat in the mens restroom in need of repair or replacement.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
