Food suppliers are Loving's Produce, Richmond Restaurant, Dori (USDA), Pepsi, Pet Dairy,and Schmidt Bakery. Proteins are received precooked, except ground beef may be received raw, frozen and thawed prior to cooking. Some hot foods maybe cooled for carry over depending on volume leftover. Cooling logs are kept but were not available during the inspection. Discussed cooling. Pasteurized fruit juices served. Observed good glove use and hand washing. New dish machine observed and operating per data plate. Observed employee health handouts posted and Form 1B in use
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Observed cheese pizza cold holding at improper temperatures
    Correction: observed at 47 F and being stored at room temperature until ready to cook. PIC stated these had been brought out of refrigeration at 7:30am (1.5 hrs prior).

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed yogurt cold holding at improper temperatures. Observed yogurt in the Hobart 2 door reach in cooler on the service line cold holding at 45 F. PIC had temperature log showing the unit at 38 F at 6:15am, temperature taken at 9:00am. Sliced tomatoes that had just been sliced and butter were the only other TCS (time-temperature controlled for safety) foods in the unit. PIC stated they had been in and out of the unit this morning during breakfast and while prepping for lunch.
    Correction: Recommend relocating food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. PIC relocated yogurt and other TCS (time-temperature controlled for safety) food to another reach in cooler.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Hobart reach in cooler on the service line was observed not in good repair and/ or proper adjustment. Observed the unit cold holding at 46 F and cold holding food > 41 F. PIC had temperature log showing unit at 38 F at 6:15am and stated they had been in and out of the unit during the morning.
    Correction: Recommend monitoring the unit and repairing the unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. PIC moved TCS food out of unit.

Discussed cooling and PIC asked to keep cooling logs. Fire suppression system serviced August 2013. Observed good date marking. Observed good glove use and hand washing. Facility observed clean and organized. Observed temperature logs for 10/1 and 10/2

    Observation: Observed yogurt cold holding at improper temperatures. Observed yogurt cold holding at 44 and 46 F. PIC had temperature log showing the equipment at 36 F within the last 4 hours. PIC stated staff had been in and out of the cooler during lunch prep.
    Correction: Recommend relocating the food to a refrigeration unit that is capable of maintaining food storage at 41°F or below, and discarding the food if it cold holds > 41 F for 4 or more hours. PIC relocated the yogurts to a freezer.
