Dishmachine is not sanitizing dishes. PIC assured me that the dishmachine is used only after dishes have been cleaned and sanitized at the 3-c sink. Please post a sign indicating that dishmachine is not to be used by itself. Clean up dead roaches. Some were found in electrical closet and under handsink. Awaiting well water results. Permit expires 10/31/15. Call when results are available or email the results to me.

Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

Observation: Roast beef at 46, turkey at 48 F in lower part of reach in.
Correction: Food was relocated. It appears that foil lined shelves are restricting air flow inside refrigerator. Remove foil and recheck food in lower part.

Observation: The prepared ready-to-eat (RTE) baked beans, mac salad in the refrigeration unit is not properly dated for disposition. Sliced deli meat not dated.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation or opening if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Note: Instruct workers who clean premises to dispose of mop water in sanitary sewer such as a toilet. Mop water should not be thrown outside onto the ground. If dishmachine is not serviced to provide proper temperatures discontinue use and use 3-c sink. I was told dishes are cleaned and sanitized prior to placing inside dishmachine. Water sample has been taken and sent to lab, results are pending. When results are received, fax or email results so that permit can be renewed.
