Reach in is holding at 34.4 F. Sign has been placed onto dishmachine to state that dishes to be washed, rinsed and sanitized prior to using. PIC to get a metal stemmed thermometer and test kit as soon as possible.

    Observation: Inside beer box and shelves at bar and in storeroom have linen or paper towels. Bare wood at bar and in storeroom.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Remove paper and linen. All bare wood and particle board to be sealed so it is cleanable.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Dishmachine is not sanitizing dishes. PIC assured me that the dishmachine is used only after dishes have been cleaned and sanitized at the 3-c sink. Please post a sign indicating that dishmachine is not to be used by itself. Clean up dead roaches. Some were found in electrical closet and under handsink. Awaiting well water results. Permit expires 10/31/15. Call when results are available or email the results to me.

    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Glass door unit has elevated temperature. Margarine was 43.9 F
    Correction: PIC relocated all TCS foods and turned unit down. Recheck later today to see if temperature has dropped.

No food operations at time of inspection. Other observations: Seal all bare wood in kitchen and bar. Provide chlorine test strips for sanitizer. Do not line shelves with paper towels. Clean fryer edges.

    Observation: Roast beef at 46, turkey at 48 F in lower part of reach in.
    Correction: Food was relocated. It appears that foil lined shelves are restricting air flow inside refrigerator. Remove foil and recheck food in lower part.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) baked beans, mac salad in the refrigeration unit is not properly dated for disposition. Sliced deli meat not dated.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation or opening if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Note: Instruct workers who clean premises to dispose of mop water in sanitary sewer such as a toilet. Mop water should not be thrown outside onto the ground. If dishmachine is not serviced to provide proper temperatures discontinue use and use 3-c sink. I was told dishes are cleaned and sanitized prior to placing inside dishmachine. Water sample has been taken and sent to lab, results are pending. When results are received, fax or email results so that permit can be renewed.
