No violations observed. Good job having visible thermometers in cold holding units. Please have and use a metal stem probe thermometer to monitor the temperature of foods you reheat. Good job storing chemicals below and separate from foods and clean dishware. Reminder that all dishware must be allowed to air dry-- no towel drying. Please remove sign that mentions drying dishware with a towel at three-compartment sink. Left January 2015 ServSafe FoodHandler class information and encouraged staff to attend. No violation noted during this evaluation.

Sanitizing Solutions, Testing Devices (repeated violation) Observation: No chlorine (bleach) sanitizer test kit was available.
Correction: Obtain sanitizer test kit & regularly use to check the strength/concentration.
Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site) Observation: Chlorine (bleach) sanitizer was >200 ppm at three-compartment sink.
Correction: Chlorine sanitizer should be between 50-100 ppm. Sanitizing solution was remade during inspection to 100 ppm. Also, please use unscented bleach.

NOTE: Good job with separate storage of chemicals away from foods. Kitchen was clean & well organized. Discussed wish, rinse, sanitize procedures. Left handouts on Employee health, food storage temperatures, hot & cold holding, using a food thermometer.
Temperature Measuring Devices - Food Observation: No food temperature measuring device (thermometer) was available to monitor the temperature of received or served foods.
Correction: Obtain a metal stem probe thermometer (0-220 degrees F.) and regularly monitor internal food temperatures.
Sanitizing Solutions, Testing Devices Observation: No sanitizer test kit was available to monitor the bleach/chlorine sanitizer concentration.
Correction: Obtain a sanitizer test kit and regularly monitor the sanitizer concentration. Wash with soap, Rinse with water, Sanitize with bleach water 50-100 ppm
Handwashing Cleanser - Availability (corrected on site) (repeated violation) Observation: At the start of the inspection, no hand soap was available at the hand wash sinks.
Correction: Corrected during the inspection with soap & paper towels stocked at hand sink.
