2. oven still not cooking evenly - make sure employees turn food and temp faithfully to be sure all portions of food are cooked to the proper temperature - recommend repairing/replacing oven as soon as possible

  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the employee bathroom.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Observation: The nonfood contact bottom surface of the old, blue Koch is not easily cleanable due to rusting and pitting.
    Correction: Paint or otherwise seal the bottom of this unit, or replace it, to provide a surface that is free of unnecessary ledges, projections, and crevices.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: AC unit on front line is missing its cover, and the Delfield Alco 3-door freezer was observed in a state of disrepair and not maintaining temperature. Also, the lower oven is still not heating evenly - cooks food around the edges without cooking thoroughly in the center of the pan.
    Correction: Replace cover on AC unit. Repair the freezer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the freezer, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Repair oven so it cooks all parts of the food evenly and thoroughly.
  • Equipment - Non-Food Contact Surfaces and Utensils
    Observation: Surface of the ice maker were observed soiled with accumulations of mildew-like substance.
    Correction: Clean the surface of the ice maker often enough to prevent build-up of any debris. Empty prior to cleaning.
  • Heating, Ventilating, Air Conditioning System Vents
    Observation: Air conditioning system designed so make-up air or exhaust vents contaminate food, food contact surfaces, equipment, or utensils. AC on front line blows directly onto food line.
    Correction: Relocate AC unit on front line so exhaust does not cause contamination of food, food contact surfaces, equipment, or utensils.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Back door open upon arrival in an effort to cool kitchen.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Floor drain is partially blocked and unable to receive condensate from AC unit, which is therefore turned off, causing the kitchen to become overheated. Also, leak underneath 3 bay sink causing floor to be wet.
    Correction: Repair leak and free drainage of AC condensate into floor drain.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition (repeated violation)
    Observation: Intake and exhaust air ducts are not being cleaned (front and rear ducts... front duct blows on service line).
    Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials
