The purpose of today's visit was to conduct a routine inspection. CFM on duty was knowledgeable. Observed facility in need of thorough cleaning.
  • Cleaning Frequency for Physical Facilities (repeated violation)
    Observation: Observed that the following is in need of cleaning:
    1) Walls,
    2) Under equipment
    3) Top of dishmachine,
    4) Inside of dishmachine,
    5) Shelving,
    6) Hood filters,
    7) Top and side of fryer.

    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

The purpose of today's visit was to conduct a routine inspection. Observed the following good practices: good cold holding food temperatures, educational information sign at handsink with example scenarios when hand washing is required and handwashing sink that does not require hands to turn water on and off
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris:
    1) Top of dishmachine
    2) Drainboard of dishmachine,
    3) Gaskets of Walkin Cooler,
    4) Floor under three compartment sink.

    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

  • Warewash Equipment / Cleaning Frequency
    Observation: The exterior and interior surfaces of the ware washing machine are soiled. Lime build up was noted on both interior and exterior surfaces of the machine. Debris was also noted on the top and sides of the machine. The piping under the ware washing machine and under the 3-compartment sink are also in need of cleaning.
    Correction: Maintain the surfaces of the ware washing machine and the 3-compartment sink in clean condition at all time. Clean the top of the machine, pipes under the machine and under the 3-compartment sink often and properly.
  • Light Bulbs / Locations where Shielding is Required (repeated violation)
    Observation: Light bulbs in one of the ceiling light fixture not covered by a protective shielding. The shield/cover is missing
    Correction: Provide light bulbs that are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles. Replace the missing the cover/shield.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the floor under warewashing machine and under the 3-compartment sink is in need of cleaning. The floor drain under this sink is also in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food. Clean the floor and floor drain in the ware washing area thoroughly and more frequently to prevent accumulation of debris.
  • Cleaning of Plumbing Fixtures
    Observation: Observed that handwashing sink in the restroom is unclean.
    Correction: Maintain handwashing sinks in clean condition at all times to promote good sanitary condition and to encourage employees to wash their hands

  • Critical: Certified Food Manager/Presence Required (corrected on site) (repeated violation)
    Observation: There is no Certified Food Manager present at the beginning of the inspection.
    Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids (repeated violation)
    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
  • Refuse / Dumpster / Covers & Lids / Construction
    Observation: The cover of the refuse container located outside the establishment is not a tight fit. The dumpster were observed to be left opened
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food residue and used outside the food establishment shall be designed and constructed to have tight fitting lids, doors, or covers.
  • Light Bulbs / Locations where Shielding is Required (repeated violation)
    Observation: Ceiling light fixture located near the back door is not covered by a protective shielding.
    Correction: Provide light bulbs that are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles.
  • Lighting Intensity / Consumer Self-Service, Reach-Ins, Other / 20 foot candles
    Observation: Observed that inadequate lighting was provided in the reach-in freezer located in the back area.
    Correction: Increase the lighting to provide a minimum of 20 foot candles in these areas. Replace the burned out light bulb to provide lighting inside this unit.
