Observation: There was duct tape wrapped around the hose associated with the sprayer head, in front of the mechanical dishwasher.
Correction: Only smooth, easily cleanable, durable materials may be used for repair of kitchen equipment. Duct tape may not be used for repairs, because duct tape introduces rough surfaces which are not cleanable at the bacterial level. The duct tape was immediately removed from the hose by the establishment management. This corrected this violation.
- Critical: Backflow Prevention, Air Gap*
Observation: The hose of the sprayer-rinse arm assembly, associated with the table in front of the mechanical dishwasher, is broken. The air gap between the bottom of the "sprayer head," and the top rim of the table below is less than one inch wide.
Correction: We require that the "air gap" between the bottom of the sprayer head, and the top rim of the table below, be at least one inch wide, when the sprayer is hanging freely. This is a 'back-flow prevention" issue, and is considered "critical." The hose of the rinse arm needs to be shortened/repaired. This needs to be taken care of as soon as is possible.

Observation: There was one large can of water chestnuts that had a dent in the bottom seam, but was being stored among canned goods intended for service to customers.
Correction: Cans with dents in top, bottom, or side seams may not be used for service to customers. Cans need to be inspected for dents in seams when deliveries arrive. Cans with dents in seams need to be separated from canned goods intended for service to customers, as soon as they arrive. Cans with dents in seams may be stored in a "specially designated area," designated with a sign (which may be hand-written) that says "damaged cans only." Damaged cans may be stored in this specially designated area, until they can be returned for reimbursement, or they may be discarded. This violation was immediately corrected by the establishment management.

- Equipment - Good Repair and Proper Adjustment
Observation: The front kitchen handwashing sink is draining very slowly. he drain pipe below the sink basin is partially "clogged.
Correction: This problem needs to be corrected, as soon as possible. We need to do everything possible to encourage frequent, and whenever necessary, handwashing.
- Lighting, Intensity
Observation: There is not enough light, on the right side of the mechanical dishwasher, in the kitchen. A fluorescent ceiling bulb is burned out, in this area of the kitchen. The light intensity in this area of the kitchen is less than 2 foot candles.
Correction: The bulb needs to be replaced (and the light cover needs to also be put back in place). We require that the lighting intensity be 20 foot candles or higher, in this area of the kitchen.

Or they may be discarded. This violation was immediately corrected by the establishment management.
