Observed very good examples of Active Managerial Control by CFM and all Food Employees on Food Safety. Observed the following best practices: 1)Thermometer placed in metal container each time coffee drink with milk is served, to verify milk is 41F or below, 2)Thermometers calibrated every morning, 3)Timer for Sanitizer buckets and 3Vat Sink, changed every hour.
Observed Peet's Coffee Employee Health Policy. Norovirus and all 5 Foodborne Illness Symptoms are not included in Policy. EHS provided additional Employee Health Policy forms for Facility.
Certified Food Manager Certificate observed during inspection, card not available at facility. Please send copy of Current Certified Food Manager Card to EHS by 8/13/15.
*Please remember that all blender containers must be washed, rinsed, and sanitized at least once every 4 hours.
  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA test kit.

The purpose of this visit is to conduct a routine inspection. Thank you for your participation as is allows for any questions or issues to be clarified. Please do the following within 10 days:
1. Obtain the photo identification Northern Virginia Certified Food Manager license card and fax or email a a copy to my attention.
2. Repair the chemical sanitizer dispenser at the three vat sink to ensure that it dispenses at allowable strength and fax or email a a copy of the invoice for the repair to my attention.

  • Equipment / Good Repair / Operation
    Observation: The Quaternary Ammonium (Quat) dispenser which is intended to automatically dispense Quat at a calibrated strength, (in this case, your allowable limit is 200ppm per manufacturing label) is dispensing quaternary ammonium at a strength above 400ppm. However, observation was that not utensils were being washed, rinsed or sanitized at the time of this inspection.
    Correction: Within 10 days, repair/adjust the unit so it quaternary ammonium at 200ppm, Fax or email a copy of the invoice for the repair to my attention at the health department within 10 days. I have left my business card with you which contains my contact information. Meanwhile, the EHS provided instruction to the manager on how to manually adjust the solution so that the strength meets the required limit noted on the labeling of the sanitizer used in this facility. The facility does have a test kit.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the front being used to store utensils. Observed the hansink at the back being used to store dishsoap in the basin.
    Correction: Manager removed the items in the basin of the handsink. EHS explained that handwashing sinks need to be clear and available to encourage employees to wash their hands. Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.
