The Town has made the necessary upgrades to the physical facility which were noted on the previous inspection. Until staff have been trained in safe food handling practices, the athletic director has elected to only serve pre-packaged non-potentially hazardous foods (bottle sodas, packaged candies and cakes.)

This seasonal establishment was not in operation during this inspection. A new PIC has taken over and the inspection was discussed with him. It was apparent from this inspection that several issues must be addressed before this establishment becomes operational for the 2014 season. The first matter that was discussed was the need for proper food handling training for all staff that will be working in the facility. Also, we discussed that all of the doors and window openings in the facility must be made weather-tight so that rain, mud, and dirt cannot easily enter the facility. It was recommended that exterior window coverings be installed as well as installing a water diversion curb around the entrance door so that mud and water cannot run underneath the door and into the food preparation area. We also discussed the need to store recreational equipment in an area outside of the food preparation area. We also discussed the use of a fryer in the establishment without the proper hood vent and fire suppression. A pre-opening inspection must be conducted prior to operating the establishment this 2014 season. Contact our office in order to arrange a suitable time.

    Observation: The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

    Observation: The person in charge failed to explain the relationship between food safety and providing equipment that is: (a) Sufficient in number and capacity, and (b) Properly designed, constructed, located, installed, operated, and cleaned.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

The PIC should be prepared to recognize conditions that may contribute to foodborne illness.     Observation: The person in charge failed to state the required temperatures and holding times for the following conditions of potentially hazardous food: (1) Refrigerated storage, (2) Hot holding, (3) Cooling, and (4) Reheating.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (repeated violation)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Food Prep tables, Food cooking equipment, and Sno-Cone Machine.
    Correction: Clean and sanitize these surfaces for food contact.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Observed single service items covered in a film of dust and dirt.
    Correction: Store single service items in its original protective packaging and protected from contaminants.
  • Physical Facilities in Good Repair
    Observation: All openings to the building are not maintained in good repair. Rain, mud, and dirt were observed to have entered the facility due to doors and windows which do not provide a weather tight seal.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: All floors and shelving units are noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Premises - Maintaining Premises - Unnecessary Items and Litter
    Observation: Facility is storing unnecessary items to the operation or maintenance of the establishment.
    Correction: Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
