Observation: Food employees in this facility were observed performing tasks in a manner not conducive to food safety. More specifically, containers of hot foods (125 degrees) were found stacked, with lids in a refrigeration unit. Storing hot foods in this manner prevents rapid cooling. (See violation below, Section 31)
Correction: Please assure that food employees are trained or given sufficient instruction related to proper food safety procedures.

Correction: Cooling of foods must be accomplished in accordance with regulatory time and temperature criteria by using methods that facilitate necessary cooling.
- Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (repeated violation)
Observation: The counter-top surfaces around the bar hand sink and other behind-bar counter, as well as a large section of metal wall facing the bar, was observed in a rusted or unclean condition.
Correction: Non-food contact surfaces exposed to splash, spillage, food soiling, or requires frequent cleaning must be constructed of smooth, nonabsorbent, corrosion-resistant material.

Please assure that all food staff are trained, and use proper methods for cooling of foods. Take care also that potentially hazardous foods stored in the walk-in cooler are not allowed to exceed time and temperature limitations during cleaning of the cooler.

Observation: Numerous potentially hazardous foods in the walk-in cooler were found at temperatures above the regulatory maximum temperatures for these foods.
Correction: A refrigeration technician was contacted for servicing the walk-in unit. The person in charge also stated that the unit warmed during a cleaning process and was returning to lower temperatures.

This facility was found to be very clean and tidy, with all refrigeration and food temperatures well within regulatory requirement. No food preparation was in process, nor food being served at the time of this inspection visit. Management at this facility is especially conscientious with matters of food safety.
