Discussed requirements for "Temperature Controlled for Safety Foods", specifically cream and milks in thermal serving containers, when time is used as a public health control. Discussed requirement that utensils for customer use be stored with handles up or, if in horizontal position, all handles lying in same direction. Discussed eating and drinking being prohibited in food prep areas. Discussed wash, rinse, sanitize process in three-bay sink. This establishment is off to a great start with good product and unit temperatures, while all surfaces observed, both food contact and non-food contact surfaces, were very clean to sight. Person-in-Charge was inquisitive of various food safety related requirements and very receptive to suggestions. Keep up the good work. Screendoor has been added. Screening around roaster has been added (window to remain closed unless roasting is occurring). Facility will open with a menu of coffee, teas, smoothies, and juices. Facility will open the hot cereal bar at a later time. Please contact the health department to review any proposals. All handwashing sinks must be properly stocked (handwashing sign, soap, papertowels (or other approved hand drying provision), and trash can). All outer openings (door to barn, window at roaster, etc.) need to be protected. All items must be washed, rinsed, and sanitized prior to opening. Sanitizer (unscented bleach) and test kit (chlorine) needed. Shelving for dirty and clean dishes needs installing. Additional handwashing sink in the kitchen has been installed. Food preparation sink has been indirectly plumbed. Mop sink has been added. Thermometer (thin diameter) has been acquired. Health Department will make additional site visit Monday.
