- Equipment - Good Repair and Proper Adjustment
Observation: There were pieces of cardboard wedged between the back handwashing sink, and the wall surface behind the handwashing sink.
Correction: This handwashing sink needs to be reattached, and sealed to the wall. The materials used in the repair need to be durable, moisture resistant, smooth, and easily cleanable. This repair needs to be taken care of prior to renewal pf the permit, on, or before 31-Dec-2015.

Observation: There were two cans of tomato sauce with dents in bottom seams, but were being stored among canned goods intended for customers.
Correction: We do not allow cans in dents in top, bottom, or side seams to be used for service to customers. Cans with dents in seams need to be immediately separated from cans intended for service to customers, when deliveries arrive, and cases are unpacked. Cans with dents in seams may be stored in a special area, designated with a sign (which can be hand-written) which says "damaged cans only," until they may be returned to the supplier for reimbursement. Or they may be discarded. This violation was immediately corrected by the establishment management.

- Nonfood Contact Surfaces
Observation: There were two inverted plastic soft drink crates being used a substitute for smooth, easily cleanable shelving, in a corner, in the walk-in refrigerator.
Correction: We do not allow the use of soft drink crates (or milk crates) as a substitute for smooth, easily cleanable shelving, in refrigerators. These crates have rough surfaces and they are not cleanable, at the bacterial level. Replace the crates with proper shelving, or with other smooth, easily cleanable materials.

Observation: There were four large cans of pizza sauce, with dents in bottom seams, but were being stored, on the canned goods storage rack, where cans intended for service to the public are being stored.
Correction: Cans with dents in top, bottom, or side seams may not be used for service to the public. Cans with dents in top, botom , or side seams need to segregated as soon as shipmemts arrive at the store and cases are unpacked. Cans with dents in top, bottom, or side seams
need to be stored in a location specially designated for "damaged cans only," until they can be returned for reimbursement, or they may be discarded. (The sign can be hand-written. It should say something to the effect of "damaged cans only.") This violation was immediately corrected by the establishment management.
- Equipment and Utensils - Durability (corrected on site)
Observation: There was a metal-banded pastry brush, in a container, next to the cold food/pizza prep bar.
Correction: Metal banded brushes may not be used (or stored) in food establishments, because the area between the metal band, and the brush, is not easily cleanable, at the bacterial level. The metal band can rust of corrode, creating surfaces that are not cleanable. Replace using a pastry brush with a plastic band. Or a pastry brush with no band.
- Critical: Toxics - Storage of Toxic Containers* (corrected on site)
Observation: There was a spray bottle of yellow oven cleaner sitting on top of the pizza oven.
Correction: Bottles of spray cleaner may not be placed on top of the pizza oven, due to the possible risk of "dripping." Always store the spray bottles of cleaners on the floor-below the pizza oven-well separated from foods, and food contact surfaces. This violation was immediately corrected by the establishment management.
