  • Equipment - Good Repair and Proper Adjustment
    Observation: There is duct tape on the front top surface of the counter top that holds the handwashing sink and the three-compartment (dishwashing) sink. The counter top is broken.
    Correction: Duct tape may not be used for repairs, even temporary repairs, in kitchen areas. Duct tape introduces rough surfaces which are not cleanable at the bacterial level. The duct tape needs to be removed, and this counter top needs to be repaired/replaced, as soon as possible.

  • Hair Restraints - Effectiveness
    Observation: The employee working at the time of ispection was not wearing a hair covering.
    Correction: We require that all employees wear at hat, a hair net, an open visor, a scarf, or some type of hair covering that we have approved. Tying the hair back does not meet this requirement.
  • Utensils - In-Use - Between-Use Storage
    Observation: The handle of the ice scoop was touching the ice, in the ice storage bin. in the ice machine.
    Correction: We require that the handle of the ice scoop be up, out of the ice, at all times. This violation was immediately corrected by the establishment management.
  • Sanitizing Solutions, Testing Devices
    Observation: The test strips for monitoring sanitizer levels, associated with wash, rinse, the sanitize, then air dry dishwashing, could not be located.
    Correction: We require that the appropriate test strips, for monitoring bleach-type sanitizer levels, be on hand. in the establishment, at all times. And all employees must know where the test strips are located. Locate or purchase a test strip kit for bleach-type sanitizers.
