    Observation: Unlabeled food containers. Working containers of Flour and brown topping.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

    Observation: Dumpsters so full that lids unable to be closed.
    Correction: Need to have dumpsters cleaned out fequently enough so that dumpster lids can remain closed.
  • Refuse - Using Drain Plugs
    Observation: The refuse container used to store refuse/recyclables has no drain plug. ( 1 of 2 )
    Correction: Replace the drain plug to the refuse container.

Strongly suggest rotate/stir potentially hazardous foods on pizza prep. table and store in metal containers vs. plastic. Metal conducts cold much more efficiently.

    Observation: Sausage (39-45°F) and Italian sausage (39-46°F) cold holding at improper temperatures in top of pizza prep. refrigerator.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Refuse - Covering Receptacles
    Observation: Dumpster or outside refuse container was open or uncovered and trash bags stacked above top.
    Correction: Cover all waste containers when not in continuous use. Get more frequent removal.
  • Outer Openings - Protected
    Observation: Base of door to outside walk-in is missing threshold and consequently has 1-2 inch open space as base of door.
    Correction: Install theshold so to preclude the entry of vermin.
