    Observation: Carafes of milk for which time rather than temperature is being used as a control was not discarded by the expiration time as indicated on the package.

ACR 35888. Caller stated eating Fontega chicken sandwich on Sunday 7/20 and the chicken was "raw and pink".
Site visit: Discussed complaint with Manager/PIC. All animal foods received by Panera are fully cooked. Facility does not have raw chicken in the facility. Chicken used in Fontega sandwich is smoked and does have a pink appearance. Observed invoice dated 7/22/14 item 6740205 from Sygma listed "Chicken SMKD cooked shredded".
(In future) Recommend facility shows customer box that indicates Fully Cooked.
Complaint cannot be justified/verified.
