    Observation: There were no temperature measuring device located in several of the RIC's.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Mops - Drying Mops (corrected on site)
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

  • Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
    Observation: Observed the nozzles on the lemonade and green tea dispenser with accumulation of grime and debris. PIC removed for cleaning.
    Correction: Clean the surface of EQUIPMENT at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

    Observation: Observed plastic and stainless steel food containers that were stacked while wet after cleaning and chemical sanitization. PIC removed containers to be rewashed, rinsed, sanitized and air dried.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Observation: The following utensils were observed soiled to sight and touch: Several ladels, spatulas and scoops.
    Correction: Clean and sanitize these surfaces for food contact.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Quatenary ammonium sanitizer used in the 3 compartment sink measured over 500 ppm. PIC called company to readjust the automatic dispenser.
    Correction: Utilize only sanitizing agent that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces

Conducted a pre-opening inspection at the request of the contractor.
Discussed with PIC:
1. All hand washing sinks need to have towel dispensers
2. Repair door sweepers on front doors
3. Caulk behind the 2 compartment sink and prep table
4. Light socket in WIC needs a light bulb or if not used needs please place a cover over socket
Will return on Thursday, August 29, 2013 for final inspection. Please address these issues before final inspection.
