Observation: In-use utensils improperly stored between use.
Correction: Store in-use / dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container, 2) On a prep table or cooking equipment that is cleaned and sanitized at least every 4 hours, or 3) In a container of water maintained at 135°F or more.

Observation: There is no test for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine sanitizer test kit so that employees can monitor the concentration of the sanitizing solutions.

Correction: Install a globe or shatter-resistant bulb in the walk-in cooler light over the door.

Observation: Less than 50 foot candles of light was noted in the kitchen. Measured 15-35 FC.
Correction: Provide at least 50 foot candles of light where food employees are working with food.
