NOTE: Good job storing raw foods (raw meat, raw in-shell eggs, etc.) below or separate from ready-to-eat food such as cheese and produce. Good job having visible thermometers in the warmest part of cold holding units. Discussed always washing hands between handling/loading dirty dishes in the dish machine and putting away clean/sanitized dishware and utensils. Also discussed only storing single-use gloves at or near the hand wash sink to remind everyone to wash hands for 20 seconds at the hand wash sink prior to putting on gloves. Left January 2016 ServSafe 4 hour food handler class handout. Left poster on always washing hands before putting away clean, sanitized dishes.

    Correction: Discussed cooling procedures with PIC and left handouts.

    Observation: Observed several foods to be out of temperature (e.g. blue cheese, diced tomatoes) in reach in cooler and salad prep unit.
    Correction: Have reach in cooler serviced to hold at 41 degrees F or below. Avoid over filling containers in salad prep unit so that the food is under the fill line.
  • Temperature Measuring Devices - Ambient Air and Water
    Observation: No hanging thermometer was provided in reach in cooler in grill kitchen.
    Correction: Provide hanging thermometer in all cold holding units so that temperatures can be monitored regularly by employees.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the grill kitchen for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonia test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

NOTE: Left & explained manual dishwashing poster & consumer advisory handout. Great job organizing coolers with beef below salmon and ready-to-eat (RTE) foods above raw foods. Downstairs prep coolers were clean & well organized. Good job storing chemicals below/separate from foods. Make sure sanitizer & drain plugs are available at 3-compartment sink. Manager is very knowledgeable about cooling methods & cooking temperatures.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: The upstairs walk-in cooler was 51 degrees F. and foods such as chicken breast (51 degrees F.), goat cheese (52 degrees F.), raw hamburger (52 degrees F.), etc. were ALL found to be out of temperature due to the unit being frozen up.
    Correction: All time control for safety (TCS) foods were moved to produce cooler & repairman was called to fix unit.
  • Sanitizing Solutions, Testing Devices
    Observation: No sanitizer test kit was available.
    Correction: Obtain test kit & regularly monitor sanitizer strength.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
    Observation: The upstairs dish machine was not properly sanitizing dishes a 0 ppm was observed.
    Correction: Regularly use test kit to monitor sanitizer - called repairman to address machine. Switch to manually wash, rinse, sanitize, & air dry for dishes until repaired.
