    Observation: Leak in roof near hood system, thus not maintained in good repair.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Water pump not working, PIC states a new pump has been ordered and will be in next week. They are not operating often until the pump arrives and they are keeping 10 gallons of water on board to be heated on the flat top and used to wash equipment if needed. Handwashing station set up between deep freezers.

Pump for hand sink broken, new pump to be ordered. Back up hand wash system in place. Recommended for permit renewal. Permit bill to be mailed soon.

    Observation: Light bulb in ceiling of truck is not shielded, coated, or otherwise shatter-resistent. Bulb sheild removed for cleaning and not replaced.

    Observation: The person in charge failed at being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program or responds correctly to the EHS's questions as they relate to the specific food operation.
    Correction: Ensure that the person in charge has a valid certified food protection manager certificate and/or correctly demonstrates knowledge of the food operation as it relates to the EHS's questions.
  • Critical: Date Marking - Ready-to-Eat; Potentially Hazardous Food; Date Marking*
    Observation: The prepared ready-to-eat soup in the freezer is not properly dated for disposition.
    Correction: Mark a 24 hour ""consume by"" date once the food is thawed. Prior to freezing Indicate the length of time the food was held refrigerated which is 7 days or less at 41°F. When the food is removed from the freezer indicate the date by which the food shall be consumed which is 7 days or less at 41°F minus the refrigeration time before the food was frozen.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Encrusted grease deposits and/or other soil deposits were observed on the food contact surfaces of the following cooking equipment: sandwich prep unit.
    Correction: Clean and sanitize food-contact surface of equipment and pans. Discard carbonized pans due to lack of cleanability.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface between fryers and under sandwich line had accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor and wall juncture in under grill not sealed.
    Correction: Seal floor and wall juncture in rooms where water flush cleaning methods are used.
