Observation: Observed employee working at the desk then put on gloves and go to work on the line without washing hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Observation: Observed 1 door refrigerator with the gasket torn and the pressure gauge on the dish machine is not working properly.
Correction: Replace torn gasket. Have pressure gauge fixed.

Observation: Observed white substance built up on the back of trays.
Correction: Trays need to be cleaned, so that the white substance is not building up on them. Most likely a chemical build up from the dish machine.
