Observation: The door gasket on the door of the hobart reachin behind the serving line is torn and in poor repair.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

Facility served pre-K students. Cooks chicken from raw once a month. Food handler cards are current. Personnel answered food temperature and employee health questions. EHS educated personnel on dented cans:what to look for and what is okay. Only one can was observed dented in dry storage. PIC stated no roast, or additives are used. No microwave use either. Facility was inspected just when workers were beginning to work so no cook or hot holding temps were observed.
- Person in Charge (corrected on site)
Observation: Unauthorized personnel such as children or customers in the food preparation, food storage, or warewashing areas. EHS observed child sitting at table in kitchen area. EHS discussed situation with PIC. Child was removed from kitchen and sent to class room.
Correction: Remove unauthorized personnel. The person in charge shall not permit persons unnecessary to the food establishment operation in the food preparation, food storage, or warewashing areas.
- Plumbing System Maintained in Good Repair
Observation: Plumbing connections under the handwashing sink beside the utility closet is leaking.
Correction: Plumbing systems and components shall be maintained in good repair. PIC to place work order for leak. Fax invoice to the local health department no later than 30 days from today.
- Physical Facilities in Good Repair
Observation: Light under the hood system is not maintained in good repair. Observed light out under the hood system.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.Fax invoice to the local health department no later then 30 days from today.
- Mops - Drying Mops
Observation: Mops not hung up to air dry. Observed mop stored leaning against wall with mop head facing upward. Mop storage is required to be hung to allow proper air flow and with mop head facing down ward to prevent handle being contaminated.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use. Have mop stored correct right away.

Observation: Both (2) sneeze shields at serving line were observed in a state of repair and condition preventing effective maintenance and easy cleaning. *Observed corners of glass of sneeze shields broken.
Correction: Discard, replace or repair the sneeze shields to provide proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

Correction: Remove any unused or non-functioning equipment from the premises.

Observation: pans were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
- Floors, Walls, and Ceilings - Cleanability
Observation: Wall or wall covering in dishroom broken tile, wood baseboard in cafateria is not smooth and easily cleanable.
Correction: Repair or replace wall or wall covering to make it smooth and easily cleanable.
