  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket on the Hobart #5B reach in right hand door is torn and is in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
02/05/2016Routine
Facility served pre-K students and cooks chicken from raw. Pasteurized juices, milk and eggs are served. No additives are used and deliveries are being observed as per PIC. Ensure all food handler cards are current right away. Violations is a class 1 misdemeanor under city ordinance. Facility has a Hobart dishwasher in place but PIC states that "it has not been used in years". If facility wants to start using machine the health department will need to come and have a look at it prior to use. EHs discussed cooling procedures with PIC. Once foods are at 135F then place in refrigeration to properly cool food down to prevent pathogen growth.
  • Person in Charge
    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. Food worker needs food handler card as required by city ordinance. Update food handler cards must be made current no later than 2 weeks from today.
    Correction: Train all employees in food safety as it relates to their assigned duties.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor or floor covering in kitchen area is not smooth and easily cleanable. Observed cracks in floor and a large area where the original flooring is missing and concrete is visible.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable. Fill in cracks and seal the flooring. Fax invoice to the local health department in 30 days from today.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry. Observed mop stored with mop head facing upward. Mops must be hung to allow proper air flow to prevent pathogen growth and mop heads must face downward to prevent contamination of handle which can be spread through the facility.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

- Ensure that ice machine is cleaned on a regular basis.

    Observation: Light bulb over rinse, sanitize compartment not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

    Observation: The cutting board(s) in the kitchen are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
