    Observation: Chicken Salads (45-46*F) and sour cream (44*F) cold holding at improper temperatures in the reach in refrigerator labeled RC1.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. This unit was being worked on prior to the inspection and was left open for an extended amount of time which allowed food temperatures to rise. The unit is now cold holding at proper temperatures. The chicken salads will not be sold and the cream cheese is being rapidly chilled.

    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F. Due to the age of the building, the facility does not comply with current code requirements. In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more handsinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, and proper installati onof laundry facilities.
At time of evaluation, the dish machine had not been used for cleaning and sanitizing. EHS ran dish machine to check wash and rinse temperatures. The rinse temperature was observed at 120* . EHS observed the reset button had popped out on the booster heater and manager pushed the button in. After the button was reset, the temperature did get up to 168* but the button kept popping out. Manager notified maintenance via phone call in my presence. Advised to use three compartment sink for manual cleaning and sanitizing until final rinse on dish machine is steady 180*.

  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: The quaternary ammonia sanitizer in the three compartment sink is too high (400 ppm).
    Correction: Corrected to 200 ppm. Use LUKEWARM/TEPID when mixing sanitizer (currently at least 100*). Also, ensure proper water level is used--per staff, the basin does not completely hold the
    water i.e. there is a slight leak.

In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more handsinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, {and proper installation of laundry facilities—for schools}.

    Observation: Drainboard lacking at the three compartment sink (it is 4 compartments).


    Correction: In the event of a change in ownership, remodel, or sink replacement, an additional drainboard shall be provided.

    Observation: The top of the hot holding cabinet is dusty.
    Correction: Clean.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed (repeated violation)
    Observation: The floor-wall junctures are not sealed below the window adjacent to the Hobart freezer by the back door.

    Correction: Seal.
  • Outdoor Walking and Driving Surfaces - Graded to Drain
    Observation: Exterior driving surfaces are not draining properly--many potholes.
    Correction: Repair driving surfaces so they drain. Pooled water on exterior walking and driving surfaces may attract rodent and breed insects.
  • Lighting, Intensity (repeated violation)
    Observation: Lighting insufficient at the slicer/chopper table, three-compartment sink, and dish room and one light bulb burned out.

    Correction: In the event of a change in ownership or remodel the lighting shall be upgraded in accordance with the most recent food regulations. Replace burned out light bulbs.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: The physical structures are in poor repair:
    1) ceiling-wall junctures in the food prep area, three compartment sink, and back of kitchen are separating
    2) ceiling peeling/flaking in dish room and above three compartment sink--the ceiling in the dishroom looks like it may fall
    3) gaps around ceiling-wall conduit in kitchen
    4) floor tile grout eroded at dish machine and ice machine

    Correction: Maintain the physical structures in good repair.
  • Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
    Observation: Floor below ice machine and dish machine is scaled.

    Correction: Clean to remove.
  • Pests - Removing Dead or Trapped Birds - Insects, Rodents, and other Pests
    Observation: Few dead insects observed on floor:
    1) behind Hobart refrigerator
    2) beside ice machine
    3) below storeroom shelving

    Correction: Clean.

all food temperatures observed are internal. String cheese stored in hobart refrigerator which is the unit that is being worked out of during prep and lunch. Advised to relocate the string cheese to the mccall refrigerator since that is used primarily for storage and is holding at or below 41*. Cheese relocated at time of evaluation (cheese will not be consumed within 4 hours. Only food consumed or discarded in 4 hours shall be stored in the hobart unit).
