    Observation: Food cold holding at improper temperature on the line/in the line cooler. (Items on top were placed on ice. Items in the bottom were moved to the walk-in cooler.) This unit may not be used for cold storage until an inspection reveals it is working properly.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Repair or replace the unit.

    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. (Operator moved items to another unit. Items in the unit are placed on ice.) Repair or replace the unit.
  • Critical: Backflow Prevention, Air Gap*
    Observation: The spray nozzle of the 3-vat sink hangs below the flood rim.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
