Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

This is a follow-up to check prep refrigerator temperatures. The bottom of the food prep refrigerator is not maintaining potentially hazardous foods at proper temperatures and is still in use. Advised once more not to use it is repaired and food is holding at or below 41 degrees F. Top of unit is maintaining at safe temperatures. Permit issued.
