Reviewed setting up 2 compartment sink when dishmachine is down. 4. Recommend enuring quaternary ammonium concentration in 2 compartment and wiping cloth buckets remains between 150-400ppm. 5. Recommend closing milk coolers between lunches to keep the temperature of milk below 41°.
