    Observation: Observed mold inside the ice machine and the drive thru drink dispenser.
    Correction: Clean and sanitize.
  • Light Bulbs Protective Shielding
    Observation: Light shield was missing from set of lights in the walk-in cooler.
    Correction: Provide shield.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Observed grease on the floor under the french fry holding unit.
    Correction: Clean.

Gloves worn, hands washed. Discussed need to change dumpsters and replace broken gaskets on cold units. 3 compartment sinks - Quat sanitizer - 200 ppm - test kit (ok).
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Found liquid eggs in walk-in at 46 degrees and Canadian bacon at 51 degrees.
    Correction: Cold hold foods are to be 41 degrees or less. Please store products at 41 degrees or less. Products were out of temperature 20-30 minutes and were flash cooled in freezer to 40 degrees in 15 minutes.

    Observation: Found wet cloth towels on top of equipment.
    Correction: all wet towels are to be kept in sanitizer when not in use. Please place wet towels in sanitizer.

    Observation: Found door gaskets are split.
    Correction: Equipment to be kept in good repair. Please replace all split and damaged gaskets on cold unit doors.
