No violations observed! Person in charge knowledgeable about food safety and answered questions correctly regarding,cooking temperatures, cold holding, sanitizing, and employee health.Discussion about removing the broken thermometer in OJ/Milk 1 door fridge. Hand washing sink available and in use with warm water, soap, and towels. Proper sanitizer concentration for wiping cloth buckets. Excellent cooking, hot and cold holding temperatures! Food safety checklist is up to date and being utilized daily. No violation noted during this evaluation.

Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing gloves during inspection. All foods are code dated as required. Food safety materials provided to manager during inspection.
Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site) Observation: The quaternary ammonium sanitizing agent was being dispensed at the equipment wash sink at a concentration greater than 400 ppm. Should also assure proper test strips are being used to monitor the strength of the sanitizer.
Correction: Utilize only @sanitizing agent@ that meet the requirements and concentration levels when applying to food contact surfaces. Employee diluted sanitizer to proper levels during inspection.

Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands, wearing and changing gloves as necessary during inspection.
Outer Openings - Protected Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. This restaurant is located next to the entrance door for the Wal-Mart store and doors are open during hours of operation.
Correction: Protect the food establishment against the entry of insects. Manager is going to bring this violation to the attention of Wal-Mart management to see if a resolution can be reached. Consideration should be given to the possible installation of an air curtain. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
Handwashing Cleanser - Availability (corrected on site) Observation: Soap was not provided at the hand wash sink in the back food preparation and dish washing area. Repair and/or replace broken hand soap dispenser.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands. Manager contacted maintenance personnel to replace dispenser by tomorrow..
