    Observation: The food contact surface of the large square food molds are not smooth, contains cracks, chips, or pits and can not be easily cleaned.(manager to order new ones)
    Correction: Repair or replace the molds to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.

Hand dryer was not working at the time inspection due to the breaker shutting off. Manger turned on the breaker to correct it. Ensure that the hand dryer is always operable of install a paper towel dispenser.
No violation noted during this evaluation.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

    Observation: Tomatoes and lettuce for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

    Observation: A heated air hand drying device was not working at the hand washing lavatory in the kitchen and no paper towels were provided.

    Observation: The comminuted or ground beef was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria. Hamburger patty 138'F off the grill.
    Correction: Continue to cook the meat to heat all parts to 155°F or above for 15 seconds, 145°F for 3 minutes, 150°F for 1 minute, or instantaneously at 158°F.

    Observation: No thermometer in the front line milk refrigerator and the thermometer in the cream refrigerator is broken.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
