Facility does not have a certified food manager. Person in charge (PIC) said the management is trying to get two workers certified as soon as possible. Presently workers all have food handlers cards. PIC was given information about the various options to get registered for a class as soon as possible. PIC showed paperwork from pest company indicative of active pest management for the facility.

    Observation: Harborage conditions exist. A bag in the back with used linen was attracting insects.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Recommend storing towels for washing in a manner that will not attract insects. Get a certified pest applicator to advise on the insects around the mop sink.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
