| This inspection was conducted as a Pre-Opening Routine Inspection of Fully Contained Mobile Unit. Discussed with Person in Charge: 1) Provide recent satisfactory water sample for Coliform Bacteria. 2) Provide Service Area letter for dumping of waste water. 3) Provide equipment thermometers for all cold holding units (on Mobile Unit & in-home storage units). 4) Provide thin-stemmed thermometer. 5) Chlorine used as sanitizer, test kit/strips available. 6) ALL food to be prepped on Mobile Unit, In-house equipment for Cold Storage only. 7) ALL prepared cooked foods to be used daily, no Cooling or Reheating for Hot Holding unless evaluated by Health Department. 8) Mobile Unit is clean & well maintained. 9) Owner(s) have Food Handler certification. 10) Menu items currently limited to Hot dogs, Chili/Chili dogs, tacos, taco/fruit salad, tamales, filly cheese steak, ceviche (no raw foods served) and non-potentially hazardous chips/candy/drinks. Health Department must be in receipt of the following prior to Issuance of Health Department Permit: 1) Satisfactory water sample from water supply which provides potable water to Mobile Unit (to be provided on annual basis), 2) Signed Service Area Authorization letter for Waste Water Disposal.
