    Observation: The chili in a hot hold unit was found at a temperature below the regulatory minimum temperature for a hot-hold potentially hazardous food.
    Correction: The chili was removed from the hot-hold unit, reheated to 165 and returned to a different hot hold unit.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Unsliced lunchmeats in the 2 door refrigeration make unit and foods in the long glass refrigerated display (at the salad end) were found to be at temperatures above the regulatory maximum temperature for these cold hold potentially hazardous foods.
    Correction: All foods were removed from the 2 door make unit and placed in another refrigeration unit, and an in-house refrigeration technician was called to check and repair the unit. The technician adjusted the thermostat on the salad section of the glass display unit.
