    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Several floor tiles throughout the food preparation area behind the serving counter are cracked and chipped.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Discussed the following items with the person in charge:
1. Recommend providing containers for storage of small-wares equipment which is used only periodically to keep it better protected between uses.
2. Contact the health department if the potential upcoming re-model is to involve the kitchen, rest-rooms or food storage areas to determine whether a plan review is required.
3. Recommend removing individually wrapped hot dogs from cardboard box for storage in refrigerator to help with cold air flow.

  • Temperature Measuring Devices - Ambient Air and Water
    Observation: The ambient air thermometer in the reach in cooler is not accurate. Thermometer appears to be broken. Observed thermometer to read approximately 25'F when the ambient air in the refrigerator was 40'F.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Floor tiles near the large popcorn popper are noted to be cracked and broken.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors around the floor/wall juncture throughout the food preparation and food storage areas are noted in need of a detailed cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Quaternary Ammonium sanitizer in a spray bottle measured at over 500 parts per million. This formula has an effective range of use of 150-400 parts per million.
    Correction: Utilize quaternary ammonium at a concentration that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces
