Lighting levels are specified so that sufficient light is available to enable employees to perform certain functions such as reading labels

    Observation: Mechanical ventilation in the employee bathroom appears not working. The grill observed hanging off the ceiling.

    Observation: The rusty walls of the walk-in refrigerator, floor of the walk-in freezer by the door and employee bathroom are not maintained in good repair. Paint observed chipping off from the ceiling by the entrance to the door and on the ceiling and walls of the employee bathroom.
    Correction: Physical facilities shall be maintained in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. This requirement is intended to ensure that the physical facilities are properly maintained in order serve their intended purpose.

    Observation: The floors and walls under and behind the equipment on cookline and back kitchen/prep area are not cleaned as often as necessary to keep them clean. Corners and floor/wall junctures in the back are in need scrubbing and deep cleaning. The exhaust ceiling area above the pizza oven is not clean. Ice built-up on the walk-in floor.
    Correction: Physical facilities shall be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Meatballs were observed hot holding at the improper temperature of 94 F. food was discarded.
