Chemical sanitizers are included with poisonous or toxic materials because they may be toxic if not used in accordance with requirements listed in the Code of Federal Regulations (CFR). Large concentrations of sanitizer in excess of the CFR requirements can be harmful because residues of the materials remain. Mice are under control, still a few droppings were observed. The dishwasher machines were checked and both machine were not ejecting sanitizer. The Manager called the technician and he instructed him by phone on how to prime the machines, the dishwashing machines started ejecting sanitizer after that. A re-inspection will be conducted at the end of June to make sure that the dishwashing machines are ejecting sanitizer.

The dishwashing machine is not tuning thermo label tape black, call for service and use the 3-part sink to sanitize, a follow-up will we conducted on April 20, 2015 to re-test the dishwashing machine. Also mice infestation was observed throughout the entire facility a follow-up will be conducted on or after May 13 to insure that the infestation is under control.

Plastic bags and wet strength paper bags may be used to line receptacles for storage inside the food establishment, or within closed outside receptacles. All containers must be maintained in good repair and cleaned as necessary in order to storage garbage and refuse under sanitary conditions as well as to prevent the breeding of flies.
